In this scenario, the Customer has noticed - after importing a STEP file into a Solid Edge part file, and transforming to sheet metal - that the Material Thickness will be greyed out.

Solution

If the Customer is using the "Thin Part to Sheetmetal" tool in "Ordered" mode, this will create the part (body) using the given Material Thickness of the STEP model.

Since there is no additional "intelligence" added, there is no information contained inside regarding how the model should be extended when Material Thickness is changed manually afterwards.  Therefore it is greyed out.

If you wish for functions with "intelligence"  - such as bends, tabs, flanges - when converting you should consider being in "Synchronous" mode.  Using the "Thin Part to Sheet Metal" tool will convert your model, defining sheet metal features, such as tabs and flanges, automatically.  Since there are now Tabs and Flanges, the model would know which side/direction to extend, therefore allowing the user to subsequently change Material Thickness.

If you still wish to do the transformation in "Ordered" mode",  the "Part to Sheet Metal" tool would be the method for converting so that there is "intelligence" in the part.  You will need to define the bends, and rip the model if necessary.  This will also create tabs/bends/flanges internally, and you can set Material Thickness afterwards.
