In Solid Edge when is the user name/owner and organisation/company name/defined, where is this stored, and how to change this?

In Solid Edge the company name/organization and user name/owner is initially defined when first installing Solid Edge:

This information is then stored in the registry under the following entries: 

• Computer\HKEY_LOCAL_MACHINE\SOFTWARE\Siemens\Solid Edge\Company
• Computer\HKEY_LOCAL_MACHINE\SOFTWARE\Siemens\Solid Edge\Owner

• Computer\HKEY_LOCAL_MACHINE\SOFTWARE\Siemens\Solid Edge\Version 223\CurrentVersion\Company
• Computer\HKEY_LOCAL_MACHINE\SOFTWARE\Siemens\Solid Edge\Version 223\CurrentVersion\Owner

This can be changed after the fact by then manually editing the above registry entries:
