Why is a changed View Background color in an unsaved Assembly file now seen in all files?

Solution

The Assembly View Background color was set with the "Background/View Override" Function and it's option "Solid".

There are three background options – Solid, Gradient and Image.
The Gradient and Image selection and values are actually stored with the view style and a single document could potentially have separate settings for each view.

The Solid color setting references a shared global color so changing this in one document/view will affect all other documents and views that have the solid color option selected. 

As a workaround, if you want to have a "persistent/private" solid color background, you can choose the gradient option and select the same color for both colors.
