How to make a U and V grid concentric circles and radial spokes versus perpendicular lines on a circular surface?
Solution
Use the function "N-Sided Surface" and change the Type from Trimmed to Triangular. This will change the U and V orientation control from perpendicular lines to circular lines with radial spokes coming from a central point on the surface.
The Shape Control section in the dialog allows adjusting the center-point location between the perimeter in all directions.
Steps on how to set the U and V grid lines on a circular surface.
1. The circular face.
2. N-Sided Surface selection.
3. Set N-Sided Surface to Triangular.
4. Select the outer edge of the surface.
5. Select OK once the edge has been selected.

6b. Change the shaded display to Wireframe - Icon method.
7. Select the function "Edit Object Display".
8. Select the N-Sided circular surface.
9. Select OK on the dialog to accept.
10. Under the "General" tab, expand the option group "Wireframe Display".
11. Select and change the zero (0) values for U and V to some value. Inserting five (5) for this example (see the blue box below).
12. Here is the final result with a U and V setting value of five (5).
